Soup's On

  • There's a fourth dish: a beef and vegetable soup, and the first to use the stove. A cook gets the beef and vegetables from the fridge, chops them at the prep table, simmers them on the stove, and garnishes the bowl at the prep table. Like a patty left on the grill, a pot left on the heat overcooks and burns.
  • Dirty plates now show what was eaten there. Chicken leaves a bone, a burger leaves crust and ketchup, a salad leaves a stray leaf or some corn. A guest who left before their food came leaves a plain smeared plate.
  • The leftovers are turned at different angles from plate to plate, so a busy dining room doesn't look stamped out.
