Drinks, the Check, and Things That Break
- Every guest now orders a drink with their meal: water, soda or iced tea. A server, or the busboy, pours it at the new drink station and brings it over before the food. Glasses go back dirty with the plates and are washed in the same load.
- Each guest gets a set of silverware when they sit down, and it's cleared and washed like everything else. If the kitchen runs out of clean sets, the next guest eats without one and isn't happy about it.
- Paying works like a real sit-down restaurant. When they're done, guests wait for the check. The server prints it at the register and brings it over. Cash is left on the table. With a card, the server takes it back to the register, runs it, and returns the slip for the guest to sign and tip.
- Things go wrong now, on the harder settings. A server can drop a dish on the way to a table (the plate breaks and the dish is made again), a busboy can lose a plate off the stack, and a guest can knock over their glass. The mess stays on the floor until someone sweeps or mops it up, and guests who walk past it notice. Now and then a fork set goes out with the scraps. Anything lost or broken is replaced at closing, for a price.
- With all the extra table service, the default crew now has three servers instead of two.
- The drawings for glasses, silverware and spills are stand-ins until their art is ready.
