Broken Is Broken

Broken and lost dishware no longer replaces itself overnight. Keeping enough plates, glasses and silverware on hand is now part of running the place: run short and the kitchen waits for clean plates, or guests sit down to no silverware.
A new Dishware panel shows how many of each are clean right now, how many broke or went missing today, and what's on order. Orders are paid at closing and arrive the next morning.
The end-of-day results list what broke, so it's clear what to order.
Later, a good manager will be able to keep the stock topped up automatically.
