Order Up

Finished dishes are set down side by side on the pass, the counter where cooks hand food to the servers, four to a spot, never piled on top of each other. When the pass is full, the next dish goes on the counter right beside it, as close to the bell as there's room for. Servers pick each one up from wherever it's sitting.
The cook rings the bell on the pass as each dish goes up.
Servers carry two plates at once when two dishes for the same table are ready, so a bigger party's food arrives together, with fewer trips.
A second hostess no longer stands on top of the first: while one is at the podium, the other waits beside it for her turn.
