Tickets to the Kitchen
- The kitchen no longer knows about an order the moment a guest says it. The server writes it down, walks the ticket to the pass (the counter between the kitchen and the dining room), and puts it in, and only then does a cook start on it, the way a real restaurant works. A long walk from the far tables now costs real time.
