What Goes in the Bin
- The dirty-dish bin shows exactly what's been dropped off, until the dishwasher takes a batch. She used to pick up plates that were still in the busboy's hands.
- The drink machine stands at the front of its counter, where the servers work it, and the clean glasses wait in a tray behind it. The tray empties as glasses go out.
