Hands at Work

Everyone's hands move while they're doing something, and rest while they wait or walk.
Cooks chop: the knife hand rocks up and down while the other holds the food, whether they're cutting ahead into a container or putting a dish together.
Guests eat: one hand, then the other, goes up to the mouth and back. They scribble when they sign the check, scrub at the bathroom sink, and talk with their hands when a server is at the table.
