Right-Handed Cutting, Guests Scoot In, Staff Lean In

  • Cooks cut right-handed: the knife is in their right hand, handle toward them and blade pointing away, and the cutting board sits on their side of the prep table.
  • Guests scoot their chair in once they've sat down, and back out when they get up to use the bathroom or to leave.
  • At the dish sink, the dirty plates and glasses wait on the dry side while one at a time is washed in the soapy water, and each clean one is carried over to its rack.
  • Staff face whatever they're working at and lean in toward it: a server at the register, the dishwasher at the sink and the trash can, cooks at their stations. (Still: glasses at the sink, and a server leaning in at the register)
  • The bathroom's paper-towel dispenser shows its new art everywhere (one drawing path still used the old one).
  • The music waits until the restaurant opens; the prep hour before is quiet.
