Pots to the Dish Pit

  • Cooks carry dirty pots and pans from the stove to the dirty-dish drop, where they sit in the tub until the dishwasher picks them up with the plates. The dishwasher only fetches them from the stove herself when she has nothing else to do, or when the cooks have run out of clean ones.
  • Pots and pans are washed one at a time at the sink after the plates and glasses: the dirty ones wait beside the basin, one is scrubbed in the soapy water, and the clean ones are set aside. They're carried to the pot rack in hand instead of disappearing.
  • Staff face the dirty-dish drop while they drop dishes off, the chair they're pushing in, and anything they're using from a diagonal square. The dishwasher stops at the drop to gather up her load.
  • When someone's already standing where they'd work, staff use a free square beside the pass, the drop, the stove or the pot rack instead of standing on top of each other.
  • Fixed a stall where cooks waiting for a mise en place container stood on the rail's square and the cook bringing it back couldn't reach the rail.
