Fair Prices, Three Cooks

The menu's list prices are now what guests think is fair: burger $14, grilled chicken $16, salad $11, soup $12, soda and iced tea $3.50.
Next in the balance test: the old list prices were below what guests think is fair, so every dish sold as a bargain and earned less than it could.
The default crew is back to three cooks: in the test with two, most days ran past 2 a.m. with guests still waiting for food.
