Swapping Dish Racks

A cook who finds the plating table out of plates, while the clean plates are still in racks by the dishwasher, no longer fetches a single plate. They take an empty rack from the plating table down to the dish area and bring back a full one, then plate from it. The next cook finds plates waiting instead of making the same trip.
It's a swap, so the dishwasher always keeps a rack to put washed plates in. Carrying the full rack off without leaving one made the dishwasher wait and cost 9–12 guests a day on three of ten test days; with the swap, service is the same as before.
