One Tray, All the Way Round

  • The griddle keeps a stack of three steel trays. Sausages come off onto one.
  • The cook carries the tray to the prep rail and sets it down while he takes the onion and relish, which go onto the tray. Then he carries the tray to the counter.
  • The tray stays on the counter while each dog is built from it.
  • After boxing the last dog, he carries the boat on the empty tray to the window and takes the tray back to the griddle's stack.
  • Relish now has its own container on the prep rail. The cook spoons it in from a jar; there's no knife and no chopping sound.
  • The ketchup, mustard, bun bag and boat stack sit at the back of the counter, leaving the front for the tray.
