Built on the Plate

  • A burger or salad is now built on its plate. The cook fetches the plate first, then lays everything that goes on it in a row at the back of the prep table. Each piece goes onto the plate in turn: for a burger, the bun, then the patty, then the cheese, lettuce, tomato and onion. Before, four piles sat around the table and swapped places whenever the cook turned.
  • Drink orders are the servers' alone now, so a drink left waiting 45 seconds moves up level with taking orders. Over 10 test seeds, a quarter-hour now serves 51 guests instead of 58: the three servers pour every drink themselves.
  • A second cook waiting on an empty container at the prep rail now stands beside the rail instead of on the first cook's tile.
