A Bigger Board, Right in Front of the Cook

  • The cutting board on the prep table is about a third bigger and sits at the cook's edge of the table, with the tray of whole items and the container either side of it.
  • Food no longer shrinks when the knife starts. A carrot or a stick of celery is as long in its cut pieces as it was whole, and the chopped pile is the same width again. (picture, step by step)
