Food Keeps Its Size

  • Every piece of food now has one size, wherever it is: in a cook's hands, on a tray, on the prep table, on the grill, and waiting to go onto a plate. Chicken and broccoli used to shrink to about half when they reached the prep table for plating, and a cook picking up a third item made everything already in hand smaller.
  • Still to do from the same check: the whole vegetables on the prep table's tray, pots and pans on the stove and racks, glasses in their rack, and the meat on the resting rack.
